Cottage Pie with Cheesy Leeks

Ingredients

  • 2 lbs ground beef
  • 1/2 large white onion, finely chopped
  • 2 tbsp. tomato paste
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 sweet potatoes, peeled and diced
  • 3 tbsp. butter
  • 1 c. mozzarella cheese, grated
  • 1 large leek, cleaned and cut into 1 inch slices

 

 

Instructions

  • Add the sweet potatoes to a pot of boiling water. Boil for 15 minutes or until tender then drain and add 2 tbsp. of butter and season well with salt and pepper.
  • While potatoes are boiling, heat 1 tbsp. of butter in a large saucepan.
  • Add the onions, carrot and garlic and sauté for a few   minutes until the onion softens.
  • Stir in the beef, breaking it up with a wooden spoon. Cook until the beef browns and then stir in the tomato paste.
  • Transfer the meat to a casserole dish and set aside.
  • Mash the potatoes until smooth. Cover the meat with a layer of the mashed potato. Sprinkle the leeks on top and cover generously with the cheese.
  • Bake at 350 for 15 minutes.
