Broccoli and Red Potatoes Side


This  is one of those I made up on the fly one day when I was board in the kitchen and I needed a break from sitting behind the computer. Everyone in the kitchen loved it.


This is incredibly simple and you can add some Parmesan to it if you would like.  But, if you are strict Paleo or whole 30 then you would not want to do that.


4 Cups of Broccoli Florets

3 Red Potatoes

Olive Oil for Drizzziling

MealFit Seasoning mix.


Put your broccoli in a bowl and drizzle some olive oil on top.


Put about a tsp of Mealfit Seasoning mix on the broccoli and toss to coat.


Spray the sheet pan with no stick spray or olive oil

Put the broccoli on ½ of the sheet pan.

Slice the Red potatoes real thin with a mandolin and place potatoes in a bowl.

Drizzle some olive oil on the potatoes and toss to coat. Then add about ½ tsp of MealFit seasoning mix to the bowl and toss again.

Put potatoes on the other side of the pan of the broccoli then bake on 350 for 14 min.


Mix and toss together and serve.
