Mama’s Breakfast Casserole Recipe


This is a busy mom’s best friend. Make 2 – 3 of these and freeze them, or make one on the weekend for the week and it makes breakfast a breeze in the morning!

Serves: 4 – 6


  • 6 Sausage Patties
  • 1 Sweet Potato
  • Olive Oil for drizzle
  • 2 pinches of mealfit Anything Goes Seasoning
  • 6 Eggs
  • ½ cup Heavy Cream or Milk
  • 1 ½ cup Cheddar Cheese (divided)
  • Cooking Spray


  • Set your oven to 400 degrees.
  • Spray your sheet pan with cooking spray and place the sausage patties on one side of the pan. Bake for 10 minutes.


  • While the sausage is is in the oven, take a mandoline and slice your sweet potatoes very thin.
  • Put the sweet potato slices in a bowl and drizzle with olive oil. Then season with one pinch of Mealfit Anything Goes Seasoning and toss to coat the slices.



  • Beat the eggs, cream, and seasoning well.
  • Add the 1 cup of cheddar cheese and whisk again.


  • When the timer goes off, add the sweet potato slices to the other half of the sheet pan and put it back in the over for 5 minutes.
  • While it’s cooking, spray a 9″ x 11″ baking dish or disposable half pan with cooking spray.
  • Take out the sausage, place in the dish or pan, and mash with a fork.
  • Place half of the sweet potatoes on top of the sausage, pour in your egg mixture, and shake the pan a little to settle it.


  • Place the other sweet potatoes on top, then layer the other ½ cup of cheddar cheese on top.
  • Cover in foil and bake for 15 minutes.
  • When the timer goes off, take it out, remove the foil and bake for 5 more minutes.
  • Let cool and enjoy!!

  • ¾ c. FRESH Basil
  • 3 tbsp of Pine Nuts
  • 1 Garlic Clove
  • ¾ tsp Lemon juice
  • ¼ tsp salt
  • 3 tbsp Olive Oil


  • Combine all ingredients except the olive oil in a food processor
  • When combined, slowly add in Olive Oil.
  • Enjoy!

Pork Tenderloin is a funny cut of meat. You can cook it and make it amazing but cook it too long and it is dry and inedible.

In this recipe we use the technique of searing. Searing is style of cooking where you cook the outside of the meat with a HOT skillet. What this does is it puts a “Jacket” on the meat and helps keep all the juices inside.


Remember, you are going to cook this pork in the oven so you do not want to cook it long in the skillet.



1 Pork tenderloin

Salt and pepper to season

12-16 slices of Bacon(Depending on how long the tenderloin is

½ Cup of Honey

2 tbsp of Olive oil


  • Season both sides of the pork tenderloin real good with Salt and pepper mix.
  • Sear your pork Tenderloin
  • on both sides
  • Take 12-16 slices of bacon
  • Overlap bacon so that you can cover the length of the tenderloin
  • Place the tenderloin on one end and Roll tight…Kinda like sushi.
  • Drizzle with olive oil and honey on top
  • Bake for 10 min on 425.
  • Pull out and drizzle again with honey
  • Bake for another 10 min
  • Pull out and drizzle again with honey
  • Bake for the final 10 min and drizzle again.

Chicken & Sausage Veggie Bake

This is a great one pot meal that does not take long at all. The longer it cooks the better.

• 1 lb. smoked sausage (chopped into rounds)
• 3 chicken thighs, boneless/skinless
• 2 yellow squash, chopped
• 1 red onion, chopped
• 3 c. Brussels sprouts
• ¼ c. olive oil
• 1 tbsp. Italian seasoning
• Salt and pepper, to taste

• Preheat oven to 400 degrees F.
• Chop the chicken and sauté on medium high in a pan for about 4-5 min.
• While the chicken is cooking, run the Brussels sprouts through the food processor and chop the other veggies.
• By this time the chicken will be mostly done. It does not have to be all the way done.
• In a bowl, toss the chicken, veggies and sausage in olive oil and add Italian seasoning, salt, and pepper.
• Put in a baking dish.
• Roast for 15 minutes.
• Toss mixture and return to oven for about 20 minutes.

Super Bowl / Party App. Hawaiian Stuck Pig

Hawaiian Stuck Pig

• 1 lb regular Kielbasa or Smoked Sausage, sliced
• 1 (20 oz.) can pineapple chunks, reserve juice
• 3 Tbsp. Teriyaki sauce
• 1 Tbsp. Chili sauce
• 1 Tbsp. Honey
• 1 Tbsp. Pineapple juice (from can)


1. Preheat oven to 425-f degrees. Line a baking sheet with Tin Foil
2. Place a piece of pineapple on top of a slice of kielbasa and stick a toothpick into them.
3. In a small bowl combine remaining ingredients. Put Sausage bites onto the baking sheet and pour glaze over tops and sides of bites.
4. Bake for 20-25 minutes until hot. Let cool slightly and serve warm.

Every sane person loves bacon and the combo of sweet and salty we have here is pretty ridiculous.

• 2 lbs pounds skinless boneless chicken thighs cut into 1 inch pieces
• 1 pound bacon
• ⅔ cup brown sugar
• 2 Tbsp chili powder
• ½ tsp cumin

1. Preheat oven to 350. In a large mixing bowl, combine ⅔ cup brown sugar, 2 Tbsp chili powder and ½ tsp cumin. Mix well.
2. Clean and trim the chicken. Cut into approx. 1 inch pieces.
3. Cut the bacon in half, roll around the chicken pieces and secure with a tooth pick.
4. Put tin foil on a baking sheet and grease with butter or olive oil
5. Roll the pieces in the brown sugar mixture..
6. Bake About 35 minutes.

MealFit Pork Tenderloin with Honey Carrots

It’s tender, juicy, easy to prepare, healthy and lean.

Be careful not to overcook this. Worst thing you can do to pork and chicken is overcook it. So watch it close. This was the best dish all week. WOW!

If you’ve never tried this delicious recipe, it’s time to try it now!

Prep Time: 15 min

Serves:  6


  • 1 pkg. pork tenderloins (2 tenderloins, about 2-2.5 lbs.)
  • 4 garlic cloves
  • 1/4 c. soy sauce
  • 2 tbsp. Dijon mustard
  • 4 tbsp. honey
  • 2 tbsp. fresh orange juice
  • 1 tbsp. finely chopped fresh rosemary
  • Freshly ground pepper, to taste
  • 3 tbsp. olive oil


  • 3 lbs. of carrots, peeled, halved, and halved lengthwise
  • 4 tbsp. olive oil
  • 2 tbsp. raw honey
  • Salt & pepper, to taste


  • Preheat oven to 350 F.
  • Rinse tenderloins and pat dry. Place in a 9×13-inch Pyrex sprayed with non-stick cooking spray.
  • Take a paring knife and poke holes in the tenderloins (on the top side only) about an inch deep. Peel garlic cloves and quarter each clove of garlic-lengthwise. If they’re really big, cut them a bit smaller- about the size of slivered almonds. Place the garlic slivers in each pocket. Set aside while making marinade.
  • In a measuring cup or in a medium bowl, whisk together all the ingredients except for the olive oil. Then slowly drizzle the olive oil while still whisking.
  • Pour the mixture over the tenderloins and put into preheated oven. Bake, uncovered, for 45 minutes, basting once halfway through the baking process.
  • As soon as you put in the pork loin, start prepping the carrots.
  • Once the pork is removed from the oven, allow the tenderloins to rest on a cutting board for about 10 minutes before slicing. Spoon the pan sauce over the tenderloin medallions.
  • Cut off carrot stems. Split the carrots down the middle then cut in half.
  • Put all the cut carrots into a bowl and add olive oil, raw honey, salt and pepper to taste, about ½ teaspoon of each. Toss to coat all the carrots.
  • Spread carrots out on a baking sheet, making sure they are in a single layer and not stacked on each other.
  • Bake for 30-35 minutes. Serve with pork loin.

Crockpot Pulled Pork Stuffed Sweet Potato

I think it’s time for a twist on the classic loaded baked potato. Meet your new best stuffed dinner buddy, the Crockpot Pulled Pork Sweet Potato! Pulled pork is delicious, and there’s nothing wrong with just eating it straight off the plate (or straight out of the oven.

This is a favorite in our home. Jackie (Wife) devours it every time I make it. Real easy.

The tenderloin recipe is traditionally done with coke but I adapted it with apple juice and club soda.


Prep Time: 12-14 min

Serves: 5


  • 1 ½ lbs. pork loin
  • 1/4 c. chili powder
  • 2 tbsp. garlic salt
  • 3 c. apple juice
  • 3 c. club soda
  • 5 large sweet potatoes
  • 3 avocados
  • Sugar-free BBQ sauce


  • Season entire pork loin with garlic salt and chili powder. Pour 1 c. of apple juice and 1 c. of club soda in the bottom of the crockpot and add the pork loin. Add the rest of the apple juice and club soda to just cover the pork loin. Cook on low for 8 hours.
  • Place potatoes in a microwave-safe bowl with 1 c. of water. Place a plate on top and microwave for about 15-18 min.
  • Remove pork from crockpot and discard almost all of the liquid leaving just a tbsp. or two of juice behind to help moisten the pork.
  • Place the pork back into the crockpot and then use two large forks to shred the meat. Leave slow cooker on low, or warm, to keep things hot until you are ready to serve.
  • When ready to serve, cut a slit in the sweet potato, lengthwise. Grab the potato from both ends and press together to open the sweet potato up. Fill each sweet potato with a generous helping of pulled pork and top with a small drizzle of sugar-free BBQ sauce.
  • Divide 3 avocados between the 5 servings.
  • Serve immediately!

3-­Ingredient Hawaiian Pulled Pork with Nomad Brussels Sprouts Slaw

3-Ingredient hawaiian Pulled Pork is great, and super easy. Only 3 ingredients including the pork!!! Deliciously simple! Sweet and savory, this Hawaiian pulled pork recipe is hard to beat.

Serves: 4-6

• 3-4 lbs. pork shoulder
• 1 can crushed or cubed pineapple (in water)
• 2 tbsp. grated ginger (or ½ tsp. dry)

• 1/2 lb. bacon, cut into small pieces
• 1/4 c. Dijon mustard
• 2 tbsp. apple cider vinegar
• 3 tbsp. fresh lemon juice
• Salt and pepper
• 1 1/2 lbs. Brussels sprouts, trimmed
• 1 tbsp. of butter


• Put pork in a crockpot.
• Dump the pineapple on top with all the liquid, too.
• Add the ginger.
• Cook on LOW for 6-8 hours.

• Cook bacon in skillet until crispy, set aside on a plate, and save the bacon fat in the skillet.
• In a separate small bowl whisk mustard, vinegar, lemon juice, salt, and pepper together.
• In a food processor slice the Brussels sprouts.
• Add sliced Brussels sprouts to bacon fat in the skillet and sauté until softened and slightly browned.
• May need to add butter if they look dry.
• When browned put in serving bowl.
• Pour mustard mixture over sprouts. Add bacon and mix all together well. Serve.
