Mama’s Breakfast Casserole Recipe


This is a busy mom’s best friend. Make 2 – 3 of these and freeze them, or make one on the weekend for the week and it makes breakfast a breeze in the morning!

Serves: 4 – 6


  • 6 Sausage Patties
  • 1 Sweet Potato
  • Olive Oil for drizzle
  • 2 pinches of mealfit Anything Goes Seasoning
  • 6 Eggs
  • ½ cup Heavy Cream or Milk
  • 1 ½ cup Cheddar Cheese (divided)
  • Cooking Spray


  • Set your oven to 400 degrees.
  • Spray your sheet pan with cooking spray and place the sausage patties on one side of the pan. Bake for 10 minutes.


  • While the sausage is is in the oven, take a mandoline and slice your sweet potatoes very thin.
  • Put the sweet potato slices in a bowl and drizzle with olive oil. Then season with one pinch of Mealfit Anything Goes Seasoning and toss to coat the slices.



  • Beat the eggs, cream, and seasoning well.
  • Add the 1 cup of cheddar cheese and whisk again.


  • When the timer goes off, add the sweet potato slices to the other half of the sheet pan and put it back in the over for 5 minutes.
  • While it’s cooking, spray a 9″ x 11″ baking dish or disposable half pan with cooking spray.
  • Take out the sausage, place in the dish or pan, and mash with a fork.
  • Place half of the sweet potatoes on top of the sausage, pour in your egg mixture, and shake the pan a little to settle it.


  • Place the other sweet potatoes on top, then layer the other ½ cup of cheddar cheese on top.
  • Cover in foil and bake for 15 minutes.
  • When the timer goes off, take it out, remove the foil and bake for 5 more minutes.
  • Let cool and enjoy!!

Homemade Pesto

Homemade pesto is 1,000 times better than the store bought stuff. Check out the MealFit recipe for homemade Pesto below. Every one loved this at MealFit ready, and it is best Pesto you will ever eat. Now you can make it at home for your family! Here is a simple recipe. Note that pesto is always made to taste, based on the ingredients at hand. So adjust the ingredients to your taste.You may add cheese and peppers to the top for garnishment, like the one below.



  • ¾ c. FRESH Basil
  • 3 tbsp of Pine Nuts
  • 1 Garlic Clove
  • ¾ tsp Lemon juice
  • ¼ tsp salt
  • 3 tbsp Olive Oil


  • Combine all ingredients except the olive oil in a food processor
  • When combined, slowly add in Olive Oil.
  • Enjoy!

Chicken & Sausage Veggie Bake

This is a great one pot meal that does not take long at all. The longer it cooks the better.

• 1 lb. smoked sausage (chopped into rounds)
• 3 chicken thighs, boneless/skinless
• 2 yellow squash, chopped
• 1 red onion, chopped
• 3 c. Brussels sprouts
• ¼ c. olive oil
• 1 tbsp. Italian seasoning
• Salt and pepper, to taste

• Preheat oven to 400 degrees F.
• Chop the chicken and sauté on medium high in a pan for about 4-5 min.
• While the chicken is cooking, run the Brussels sprouts through the food processor and chop the other veggies.
• By this time the chicken will be mostly done. It does not have to be all the way done.
• In a bowl, toss the chicken, veggies and sausage in olive oil and add Italian seasoning, salt, and pepper.
• Put in a baking dish.
• Roast for 15 minutes.
• Toss mixture and return to oven for about 20 minutes.

Super easy appetizer or party food.

Hawaiian Stuck Pig

• 1 lb regular Kielbasa or Smoked Sausage, sliced
• 1 (20 oz.) can pineapple chunks, reserve juice
• 3 Tbsp. Teriyaki sauce
• 1 Tbsp. Chili sauce
• 1 Tbsp. Honey
• 1 Tbsp. Pineapple juice (from can)


1. Preheat oven to 425-f degrees. Line a baking sheet with Tin Foil
2. Place a piece of pineapple on top of a slice of kielbasa and stick a toothpick into them.
3. In a small bowl combine remaining ingredients. Put Sausage bites onto the baking sheet and pour glaze over tops and sides of bites.
4. Bake for 20-25 minutes until hot. Let cool slightly and serve warm.

Crockpot Pizza

Crock Pot Pizza is an incredibly delicious meal for the entire family to enjoy! It is really easy to make, kid friendly, and perfect for busy days!

A delicious and tantalizing crockpot dish that doesn’t disappoint when it comes to flavor.

Good dish. I have some Step by step pics to help guide you.

Prep Time: 15-18 min

Serves: 8


  • 1 14 oz. jar pasta sauce (divided)
  • 1 beaten egg
  • 1/4 c. chopped onion
  • 1/2 c. chopped green pepper
  • 1/3 cup dry bread crumbs
  • 1/2 tsp. Italian seasoning
  • 1/2 tbsp. minced garlic
  • 1/3 c. shaved Parmesan
  • 1/4 tsp. black pepper
  • 1 lb. ground beef
  • 1/2 lb. hot pork sausage
  • 1 c. shredded mozzarella
  • Diced fresh parsley for garnish (optional)


  • Begin by laying three strips of aluminum foil into the slow cooker.
  • Reserve 1/2 cup of pizza sauce. In a mixing bowl, combine 2/3 cup pizza sauce and the egg. Stir in onion, green pepper, bread crumbs, Italian seasoning, garlic, Parmesan, and black pepper. Add ground beef and pork sausage. Mix well with hands
  • Shape meat mixture into a loaf and place into slow cooker on top of aluminum foil strips. Cover and cook 8 – 10 hours on low or 4 to 6 hours on high. Center of meatloaf should be 170 degrees when done
  • Spread loaf with reserved 1/2 cup of pizza sauce and mozzarella cheese. Cover and cook for 15 minutes or until cheese is melted. Lift meatloaf from slow cooker using foil strips. Remove foil strips and serve.

MealFit Salmon Amazing

MealFit Salmon Amazing. This Salmon Recipe is so Quick and Easy. Healthy and Delicious.

I tried to create a salmon dish that was only 1 cooking step. This is easy and good. Did a video to guide you on this one.

Prep Time: 12-16 min

Serves: 4


  • 1 tbsp. cornstarch
  • 1/4 c. soy sauce
  • 1/4 c. brown sugar, packed
  • 1/2 tsp. ground ginger
  • 1/4 tsp. garlic powder
  • 2 tbsp. honey
  • 4 salmon filets
  • 2 bunches of asparagus


  • 1/2 c. mayonnaise
  • 2-3 tbsp. Sriracha
  • 1 1/2 tbsp. sweetened condensed milk


  • Preheat oven to 400 degrees F.
  • Place Asparagus in dish and drizzle with olive oil
  • To make the Sriracha cream sauce, whisk together mayonnaise, 2 tablespoons Sriracha and condensed milk in a small bowl; set aside.
  • In a small bowl, whisk together cornstarch and 1/4 cup water; set aside.
  • In a small saucepan over medium heat, add soy sauce, brown sugar, ginger, garlic powder, honey and 1 cup water; bring to a simmer. Stir in cornstarch mixture until thickened enough to coat the back of a spoon, about 2 minutes; let cool to room temperature.
  • In a gallon size Ziploc bag or large bowl, combine THE marinade and salmon filets; marinate for 5-10 minutes to overnight, turning the bag occasionally.
  • Preheat oven to 400 degrees F. Lightly coat an 8×8 baking dish with nonstick spray.
  • Place Asparagus in dish and salmon filets on top. Pour the marinade onto prepared baking dish and bake until the fish flakes easily with a fork, about 20 minutes.
  • Serve salmon immediately with Sriracha cream sauce.

Chorizo and Sweet Potato Enchiladas

Chorizo and Sweet Potato Enchiladas is an all time favorite.

These Chorizo and Sweet Potato Enchiladas are pretty freaking amazing.  They’ve got that whole spicy, sweet, cheesy, comforting thing going on.  Wonderful, complex flavors that mingle together so well! It requires very few ingredients and seemed very easy and delicious.

Try this at home and let me know how this turns out for you guys.

Prep Time: 14-17 min

Serves: 3


  • 2 tbsp. olive oil
  • 2 sweet potatoes
  • 1 medium bell pepper
  • 2 cloves garlic
  • 1 lb. chorizo
  • 8 taco size tortillas
  • 1 (15 oz.) can enchilada sauce
  • 1½ c. shredded cheese


  • Peel the sweet potato and cut into a half inch cubes. Remove the stem and seeds from the pepper and also dice into half inch pieces. Mince the garlic.
  • In a large skillet, cook the sweet potato, pepper and garlic in olive oil, over medium heat until they begin to soften (about 10 minutes).
  • Squeeze the chorizo out of it’s casing into the skillet. Break up the meat and cook until thoroughly browned (about 5 minutes).
  • Spray a large casserole dish with non-stick spray and preheat the oven to 375 degrees. Scoop about ¾ cup of the chorizo sweet potato filling into each tortilla. Fold in the ends and then roll the tortilla up around the filling.
  • Place the filled and rolled tortillas in the baking dish. They should fill the dish and fit tightly against each other to prevent unrolling.
  • Pour the enchilada sauce over the rolled tortillas and top with shredded cheese. Bake in the oven until the edges begin to bubble (about 20 minutes).
  • Serve hot.

Oven-Roasted Fall Goodness

Oven Roasted Fall Goodness is one of my favorite dishes. This is one that everyone loves.

I could go on and on about the deliciousness you will taste, but I’m sure by now you just want to try it for yourself. Go ahead, try it tonight and make your belly very, very happy. Did a VIDEO on how to make it.

Prep Time: 10 min

Serves: 3

*This is pretty addicting.

You may want to double this recipe.


  • 1 medium red onion
  • 1½ lbs. (2 small or 1 large) sweet potato
  • 2 medium apples (peeled)
  • 2 tbsp. olive oil
  • 1 tsp. dried basil
  • 1 tsp. dried sage
  • 1 tsp. dried rosemary
  • ½ tsp. salt
  • Freshly cracked pepper (10-15 cranks of a mill)
  • 4-5 links Italian sausage
  • Handful fresh parsley (optional/garnish)


  • Preheat the oven to 400 degrees.
  • Cut the apples and onion into one-inch chunks. Peel the sweet potato and cut it into one-inch chunks as well. Place the chopped apples, onions, and sweet potatoes in a large 9×13 inch casserole dish. Add the olive oil, basil, sage, rosemary, salt, and some freshly cracked pepper. Toss until everything is well coated in oil and herbs.
  • Nestle the sausage down into the casserole dish. Transfer the casserole dish to the preheated oven and bake for 45 minutes.
  • Stir once and flip the sausage at the 25-minute mark.
  • After removing the dish from the oven, slice the sausage into thin medallions and add it back to the dish. Sprinkle with chopped, fresh parsley if desired.

Grilled chicken with Sausage and onion stuffing

The Sausage and onion stuffing is the best thing on the menu this week. We did it for all of our MealFit READY people this week and they loved it.

This grilled chicken not only has a down-home country flavor. It’s attractive as well. Friends and family are always impressed when I put this on the table.

Prep Time: Chicken 3 min ; Side 17 min

Serves: 5-7

*BEST DISH we have made in a while. WE LOVED THIS!

My 3-year old ate all of his then started taking it off my 6-year old’s plate.


• 5-7 boneless skinless chicken thighs
• 2 c. of white vinegar
• 1 c. of olive oil
• 1 c. of soy sauce
• ¼ c. of lemon juice (less if you do not like lemon flavor)
• 1 ½ tbsp. garlic powder
• 1 tbsp. Tony Chachere’s seasoning
• 1 tbsp. of garlic salt


• 1 lb. ground pork sausage
• 2 yellow onions, sliced
• 1 sweet potato
• 1 container of mushrooms, roughly chopped
• 2 tbsp. white wine vinegar
• 1 c. pecans, chopped
• 2 eggs, beaten
• ⅓ c. chicken broth
• 1 tbsp. ground thyme
• 2 tbsp. butter or coconut oil
• 1 garlic clove, minced
• Salt and pepper, to taste


• Take all the ingredients except the chicken and mix in a bowl with a whisk or fork and get them combined really well.
• Put chicken in the bowl.
• You can let it marinate for as little a 15 min or up to all day.
• Turn on grill to MED HIGH.
• When grill is hot, place chicken on grill and cook for 3 min.
• Flip chicken every 3 min till done.
• Every time you flip the chicken put it back in the marinade.
• (No worries. You will not get sick because you dip it back in the mixture).
• Depending on how hot your grill is you will cook it about 12 min.


• Preheat oven to 375 degrees.
• Cover a baking sheet with foil, throw diced sweet potatoes on it, sprinkle with olive oil and salt and pepper. Bake for about 15-20 minutes or until sweet potatoes are tender, then set aside.
• While those cook, pull out a large skillet, place it under medium-high heat and place a tablespoon of butter along your minced garlic clove and your mushrooms and onions in it to begin to cook down. Add a bit of salt and pepper and cook until soft.
• When your mushrooms and onions are done cooking, add your pork sausage to the hot mushroom pan. Use a wooden spoon to break up sausage and cook until almost cooked through.
• Once the sausage is all done, set aside to cool.
• One sausage is cool, beat your eggs, add to your sausage mixture, and add your chicken broth and vinegar, along with your sweet potatoes, pecans, and chopped herbs. Mix well.
• Place in a 9×13 baking dish. Bake at 375 degrees for about 10-15 minutes.

Sausage Extravaganza

When you are in hurry and do not have a lot of time this is a quick and easy dish. Easy and amazing dish with smoked sausage, peppers, onions and celery.

Sausage Extravaganza was one of the best things this week. Did this one for my MealFit Ready people and they loved it. I also did a “HOW TO” VIDEO on it.

Sausage Extravaganza

Prep Time: 10 min

Serves: 5

• 2 lbs. smoked sausage
• 2 tbsp. butter
• 2 bell peppers
• 1 stalk of celery
• 1 onion
• 1 tsp. salt
• 1 tsp. garlic salt
• 1 tsp. Tony Chachere’s
• 1 tbsp. garlic
• 1 c. mozzarella cheese

• Heat butter in a skillet.
• Cut up peppers, onion, celery and sauté in the skillet for about 3 min.
• While the veggies are sautéing, cut the sausage into circles and throw into the skillet with the veggies, adding the garlic and spices. Cook for about 6-8 min.
• When sausage is done, top with cheese and serve.
• Super EASY
