Easy Chicken Recipe

This was made on one of those days where we were too busy and Jackie and I look up at each other at 5:30 and she says “Whats for dinner? ”

I then run through my mind what all we have in the kitchen then proceed to create something as fast as I can so that I can spend more time with the ones I love.

This literally took 20 minutes from fridge to table. SO easy and amazingly good. This is why i encourage you to experiment with your food. It is the best way to learn.

2 lbs of Boneless Skinless Chicken Thighs

1 tbsp cumin

1 tsp celery seed

1 tbsp paprika

1 tsp Salt

1 ranch packet

2 tsp Coconut oil

2 tbsp of Butter

 

Instructions:

1. Mix spices together in a bowl

2. Melt oil in a coffee cup in the microwave (30 seconds)

3. Baste the chicken with the oil then season on both sides

4.Heat a skillet with either butter or coconut oil

5. Sear in a skillet that has 2 tbsp of butter or coconut oil 90 seconds for on each side

6. Bake for 15 min on 425

 

So simple, yet so good.

Bacon-Wrapped Chicken Thighs with Smashed Sweet Potatoes

Bacon Wrapped Chicken with Smashed Sweet potatoes. Bacon wrapped anything is good and the Smashed Potatoes recipe is different than one we did earlier in the year.

These Bacon Wrapped Chicken Thighs are so delicious and easy to make. All you have to do it season the chicken, wrap it with bacon, and throw it in the oven. The results are juicy and flavorful chicken.

Everything tastes better with bacon: a terrific recipe for bacon-wrapped chicken thighs with Smashed Sweet potatoes that is sure to be a big hit. Also did a video on this one.

Prep Time:  15-18 min

Serves:  5

Ingredients

  • 2 lbs. boneless chicken thighs
  • 8 oz. bacon, or one slice per thigh
  • Sea salt and pepper, to taste

Side:

  • 3 lbs. sweet potatoes
  • ½ can of coconut milk
  • 2 tbsp. honey
  • 2 tsp. salt

Instructions

  • Preheat oven to 350°F.
  • Line a baking sheet with foil.
  • Season the chicken with salt and pepper.
  • Wrap one piece of bacon around each chicken thigh and place on the baking sheet.
  • Bake in the oven for about 25 minutes or until cooked through.

Side:

  • Put a pot of water on the stove on high and bring to a roaring boil.
  • Peel and cube the sweet potatoes.
  • Boil them for about 10 min
  • Drain the water off the sweet potatoes.
  • Throw the sweet pot in a food processor and add the coconut milk, honey and salt.
  • Pulse till it is your desired consistency.
  • If you do not have a food processor you can use a blender or the old-fashioned way and mash by hand.

Crispy Italian Chicken Thighs

Healthy and Delicious Crispy Italian Chicken Thighs. Super easy recipe that tastes just like fried chicken!

This chicken was amazing right out of the oven. I had that “Fried” feel but without the breading.

Be liberal with the seasonings and enjoy! We also did a video on it. Hope you like it.

Prep Time: 18 min

Serves: 4

Ingredients

  • 3 lb. boneless/skinless chicken thighs
  • 2 tsp. garlic powder
  • 2 tsp. red pepper flakes (optional)
  • 2 tsp. dried oregano
  • 2 tsp. sea salt

Instructions

  • Preheat the oven to 400°F.
  • Line a baking sheet with foil.
  • Mix the garlic powder, red pepper flakes, oregano, and salt in a small bowl.
  • Place the chicken thighs on the baking sheet and dry the skin well with a paper towel. Flip the thighs over so the skin side is down.
  • Sprinkle evenly with half of the seasonings – garlic powder, red pepper flakes, oregano and salt. Flip over and season the other side.
  • Bake about 25-30 minutes (in a convection oven) or 35-40 minutes (in a regular oven) until the thighs are cooked through completely.
