Lockert Roasted Veggies

 

This is by far the most popular dish I make. There is someone that requests this every week. It has all the veggies our family loves. This idea came from a friend of mine, Jake Lockert.

It has morphed over the years and this is the combination we feel like is the best. You can use any combo of veggies you want.

You will need:

8 Slices of Bacon
3 Sweet Potatoes
2 Beets
1 lb of Broccoli Florets
2 Squash
2 Zucchini
1 Tbsp of Garlic Salt
1 Tbsp Garlic and Sriracha Seasoning
1 tsp of Salt
1½ tsp Pepper
¼ cup of Olive Oil

Begin by pre-heating your oven to 450º.
Cover a sheet pan with aluminum foil and place half of the bacon on the foil so that you cover as much of the pan as possible. Then, put this in the oven for about 7-8 minutes while you cut up the veggies.

Chop up the sweet potatoes, beets, broccoli, squash, or any other vegetables you prefer

Place all cut veggies into a bowl

Season liberally with garlic salt, Garlic Sriracha, salt, and pepper.

Cover the bowl with a lid and shake to mix

Pour olive oil onto the veggies while they are still in the bowl

Now pour the veggies on top of the half-cooked bacon

Place the other half of bacon on top of the veggies in rows

Bake at 450º for 20-25 min or until the top layer of bacon is crisp

Put in oven while you cut up veggies – about 7-8 minutes
Cut up all the veggies and place in a bowl
Season liberally with garlic salt, Garlic Sriracha, salt, and pepper
Place lid on bowl and shake to mix together
Pour olive oil on the veggies
Place all the veggies on top of the ½ cooked bacon
Place the other half of the bacon on top of the veggies in rows
Bake at 450º for 20-25 min or until the top layer of bacon is crisp

Oven-Roasted Fall Goodness

Oven Roasted Fall Goodness is one of my favorite dishes. This is one that everyone loves.

I could go on and on about the deliciousness you will taste, but I’m sure by now you just want to try it for yourself. Go ahead, try it tonight and make your belly very, very happy. Did a VIDEO on how to make it.

Prep Time: 10 min

Serves: 3

*This is pretty addicting.

You may want to double this recipe.

Ingredients

  • 1 medium red onion
  • 1½ lbs. (2 small or 1 large) sweet potato
  • 2 medium apples (peeled)
  • 2 tbsp. olive oil
  • 1 tsp. dried basil
  • 1 tsp. dried sage
  • 1 tsp. dried rosemary
  • ½ tsp. salt
  • Freshly cracked pepper (10-15 cranks of a mill)
  • 4-5 links Italian sausage
  • Handful fresh parsley (optional/garnish)

Instructions

  • Preheat the oven to 400 degrees.
  • Cut the apples and onion into one-inch chunks. Peel the sweet potato and cut it into one-inch chunks as well. Place the chopped apples, onions, and sweet potatoes in a large 9×13 inch casserole dish. Add the olive oil, basil, sage, rosemary, salt, and some freshly cracked pepper. Toss until everything is well coated in oil and herbs.
  • Nestle the sausage down into the casserole dish. Transfer the casserole dish to the preheated oven and bake for 45 minutes.
  • Stir once and flip the sausage at the 25-minute mark.
  • After removing the dish from the oven, slice the sausage into thin medallions and add it back to the dish. Sprinkle with chopped, fresh parsley if desired.

Roasted Cauliflower

This method of preparing cauliflower is very simple and extremely delicious! Once you’ve taste roasted cauliflower, you will never go back to boiling cauliflower. This is my favorite way of serving cauliflower. If you have never roasted cauliflower, try it now!

Roasted cauliflower is so good that you could even serve it as an appetizer or as a snack. Even children love this roasted cauliflower!

Prep Time: 6-8 min

Serves: 7-9

Ingredients

• 1 medium head cauliflower
• 2 tbsp. melted butter or coconut oil
• 1 tsp. dried rosemary, crushed
• 1 large clove of garlic, minced or pressed
• Sea salt and pepper, to taste

Instructions

• Preheat oven to 400 degrees.
• Cover a baking sheet with foil.
• Cut cauliflower into small pieces, 3/4 to 1 inch. Melt butter or coconut oil and add the rosemary and garlic. Mix well and pour over the cauliflower. Stir to coat the cauliflower.
• Spread the cauliflower in a single layer on the cookie sheet. Salt and pepper to taste.
• Bake in the 400 degree oven for 30-35 minutes, stirring after about 20 minutes to brown evenly.
• Serve warm.
